Hope you all had a good weekend. We had a good one that included our usual weekend chores; cleaning, laundry, grocery and along with that we threw in a mix of Blueberry picking fare. We had been planning for the blueberry picking for a long time now, but it materialized only last week.
We went there with another friend of ours and it was fun time both for kids and adults as well. Fresh, luscious blueberries hand picked right off of the farm; close to the nature as we could get and it was a wonderful experience. In the two and half hours that we had been there, we managed to get close to a galloon of blueberries, all for a decent price.
The only complaint we had was the scorching summer heat. Well it was the end of June and in the state of Texas what else could we expect? The less said about the heat the better. It was a payback time for all the good time that we had there. End of it all, we were craving for ice cold water and fresh juices, to quench that never ending thirst.
After we got back home I was so relieved to see a big hunk of water melon sitting pretty in the corner of the refrigerator. All I could think of was making fresh watermelon juice/ Watermelon Limeade Cooler. Since we had some club soda at home, DH suggested making Watermelon Agua Fresca. Well I was stumped hearing the name as I was hearing it for the first time and was imagining something complex.
I love it when a complex sounding name (at least for people me hearing for the first time) such as this turns out to be an elegant, no-frill drink so apt for a scorching summer heat. Agua Fresca is Spanish for “fresh water” is a combination of fresh fruit, water and these drinks are popular in Mexico. Being non-alcoholic these are kid friendly too. The kiddo had this without the soda and he loved it.
You can substitute other fruits like papaya, strawberries, mangoes or cantaloupe instead of watermelon for making this juice.
- 4 cups cubed watermelon (seeded and rind removed)
- 1 cup water
- 1/4 cup sugar
- Juice of lime (I used lemon, as I did not have lime) add more if required
- 4 cups club soda ( chilled )
- lemon slices
- Puree the watermelon, part of the water and the sugar in a blender.
- Pour this through a strainer into a container to remove the pulp.
- Stir in the juice of lemon and refrigerate.
- Stir in soda while serving and garnish with lemon wedges.
