So this last Friday it was just me and the little one at home for dinner. Dear Husband had a dinner-meeting with his work colleagues and he was off for the night. I did not want to slave and spend a lot of time in the kitchen and neither did I want to snack on something unhealthy. Blame it on cold wintery nights and I was also craving for something hot and “chatpata”. I peeked at my fridge and found some shredded cheese and some remnants of spinach leaves. So I instantly had this idea of making Quesadilla using chapathis as I had no tortillas to go the authentic way.
This is my contribution to Game Night Party Recipes hosted by the wonderful and talented Mansi.
Ingredients:
Chapathi dough
1 medium onion
1 cup spinach
1 cup shredded cheese (I used 2% sharp cheddar)
2-3 green chillies
Oil
Salt to taste
Preparation:

Chop the onions length wise into small pieces and keep aside.

Clean the Spinach leaves and chop into fine pieces.

Slit green chillies.
Method:

Onion Sabji: Take a heavy bottom pan, add the oil. Wait until hot.

Now add garlic and mix until it lightly browns up. Add Onions and stir until it truns a bit brown.

Add green chillies and chopped spinach, salt and mix until done. Keep aside.

Make chapathis the usual way. When cooked on both sides, place a spoonful of prepared Sabji and shredded cheese on one half on the chapathi.

Close the chapathi using the other half into a semi-circle shape. Cook on both sides for about 10 secs. Peek to see if the cheese has melted.

Cut into wedges. Serve with ketchup when hot.
That’s a very clever quesedilla 🙂
As for you question on the soy-oats cookies, yes, I used quick cooking Quaker oats! Its chewy and nice when baked in cookies 🙂

This is something I make a lot because my daughter loves it. I usually put it together and then put it under the grill just before serving, so it is hot and the cheese is all melty just when you want to eat.
Chapatis are lot less fattier than Tortillas which are loaded with lard! Looks great RC, great entry too!:))
Quesadillas work great when you want something quick and satisfying. They look lovely.

I’m not either a blog reader or a blogger.I was browsing the internet for kids friendly vegeterian meal ,something different that would fantasize and encourage my 2yr old to eat.When I typed ‘Chapathi dishes’ ,your chapathi style Quesadilla popped up , I prepared it and sent it my daughter’s daycare ,preheating it.U know what it was a thumbs up for me she finished it all ,which was the first time ever I have seen her lunch box clean.Her teacher commented ‘Mrs.Ashwin ,you should try sending her something like this everyday’.Now on I think i’ll continue to visit your blog and I find all your receipes creative and unique.
