Dear Husband’s perpetual complaint is that the vegetables here in the United States, especially Zucchini have a sweetish taste to them and accents even more when cooked. He complains that it tends to ruin the taste of the dish and tends to steer clear from that vegetable. I on the other hand love it; and also being the sweet toothed person can never understand what the plight is all about. I eat hot and spicy food too, but also like the sweetish taste the vegetables have to offer when cooked.
“Oh no, look what happened, I mistook Zucchini for a cucumber and bought it again” I said.
“Yeah right, you need to come up with a better story than that” he said
Wonder why he doesn’t buy my cucumber theory anymore! J

Ingredients
2 medium Zucchini
4-5 garlic peeled pods
Salt
mustard seeds
Turmeric
Chilli powder
Oil
Preparation:

Dice the zucchini in half-moon shapes ( Actually any shape is fine as long as it is small)

Heat oil in a kadai and then add the mustard seeds. Once they splutter add garlic and fry until brown.

Add the diced zucchini and crank up the heat a bit. Add salt and fry for a bit.

Zucchini tends to leave lot of water while cooking, so no additional water is necessary to cook this.

When nearly cooked add turmeric and chilli powder. Adjust taste.
Serve hot with rice, rotis or phulkas.

Good excuse (while it worked of course) 🙂 I’ve never made zucchini like this but to make my husband eat, I tend to roast it along with other veggies like yellow squash, carrots, garlic, onion and bell peppers and serve that like a panini or toss with pasta.
Must try this for myself though.

That is one quick dish with Zucchini. I am neutral where Zucchini is concerned but I tend to buy it a lot because it is readily available. I grill Zucchini with a just bit of salt and sambhar powder and for some reason that tastes better. try it on your DH 🙂

Zucchini is one of my all-time favorite veggies! I wish I had some to cook up right now. I just cooked up a batch of zucchini muffins made with shredded zucchini and pineapple which are nearly all gone already LOL! I am a total newbie at gardening. In fact, I am just beginning my very first vegetable garden in years. A neighbor swears by Espoma Plant Food which is very reasonably priced online at

Just tried this recipe. A simple and tasty recipe. The browned garlic dissolves in the zucchini liquids to yield a savory gravy.
Thanks for this sabji! I liked its “bones” but I have a potato-loving hubby so I added cubed potatoes and a bit of chopped onion when I added the zucchini. Fried it up for a bit, covered it and then put it on low with a small amount of water. Also, sprinkled a small amount of sugar. It turned out wonderfully. And it was a pretty easy way to get more vegetables into the hubby.
