Pico De Gallo (Tomato Onion Salad)

In Mexican cuisine, Pico de gallo (Spanish for “rooster’s beak”) is a fresh condiment more like a salad made from chopped tomato, onion, and chilles (typically jalapeños).  The chopped vegetables are then mixed and tossed with lime juice and salt. I heard about this

Last week was pretty hectic both on the work front as well as on the personal front. Right from the get-go on Monday up to Friday we had crazy schedules and other things lined up one after the other. Dear Husband was also out of town for couple of days and that just piled more work on me. Never the less I was very happy to see the weekend come by and was able get some rest and relaxation.

Another good thing that happened during the weekend was that we had invitation to dinner on Saturday and Sunday at two different friend’s place. So that made me stay away from the kitchen and try my hand at little experimenting and also reading books.

I had been eyeing this recipe for a long time now. I had seen this on many blogs and also in the book “Joy of Vegan Baking”. The weather was pleasant and seemed very apt to try out this cold and soothing drink.

The weather here has taken a complete U-turn. It’s been raining every single day for the past 20 days, with overcast skies and gloomy surroundings that feel anything but spring-like.

During the weekdays, though, the rain barely affects me. I’m cooped up in the office, surrounded by bright artificial lighting, controlled temperatures, and no glimpse of the outside world. Rain or shine, the view inside my workplace remains the same, monotonous ‘landscape.’

But weekends are a different story. When it rains on weekends, we’re pretty much confined to our home, and even simple tasks like grocery shopping feel like an ordeal.

This past Saturday was a prime example—it rained incessantly all day, accompanied by thunder and lightning like I’ve never seen before. Call me weird, but I’m not one of those “rainy day, pakodas, and hot tea” types. On a dark, cloudy day like that, I find it impossible to muster up the energy to whip up bhajjis or pakodas. Instead, I’d much rather sprawl on the couch, watching an old, sappy romantic movie and maybe even shedding a tear or two. Remember the movie One Fine Day? It’s perfect for moments like these.
