No Bake Energy Balls

When I stumbled onto the No Bake healthy energy balls, I knew I had to try them. There are many reasons why I love this simple yet healthy recipe. For starters, there is no baking, microwaving, or any stove top cooking involved; it is as easy as mixing up the ingredients and transferring them to the refrigerator. And then it uses up all natural ingredients and there is no sugar, butter or oil involved. It is all healthy ingredients rolled into the goodness of a ball.  I had a big stash of flaxseeds and ground flax seeds meal in my…

Easy Corn Bread

I remember years ago when we had taken a road trip to Austin, we were tired, hungry and were craving for something warm and hearty. It was dark and colder than the usual and with no many choices on hand we reluctantly stopped at a local café located on the highway. However we were in for a treat, when we tasted their corn bread along with hot black bean soup. We had never tasted such cornbread before, hot, moist and delicious it totally worth the stop we made there.  Again in our recent trip, we tried to locate that place,…

Strawberry Oat Bars

These bars are delicious, adaptable and very easy to make. You can substitute any preserves of your choice like raspberry, peach etc. I usually have strawberry preserves on hand and so I used it in this recipe.    The crust in many ways reminds me of the one that I had made for Apple crisp.I was in a hurry when I made these and so did not have the time to take good pictures. Trust me the pictures do not do justice to the taste of these delicious bars. These make a good snack and great accompaniment with tea or coffee. …

Stuffed Capsicum/ Bharvaan Mirchi

Indian style stuffed vegetable dishes that I know of are notorious for being complicated and time consuming. What with the roasting of spices, grinding, stuffing and cooking it can take up a better part of the day. I have this experience while making the stuffed brinjal, a traditional coconut based stuffed dish.  But this stuffed bell pepper dish on the other hand is quite easy to dish out and looks elegant too. There is no roasting of spices or grinding and since the capsicums are baked, they do not require the baby sitting. I am really excited about this recipe,…

Vegan Banana Coconut Bread (Quick Bread)

I’m not sure if I’ve asked this before, but I’m hoping for fresh ideas. O dear reader, what do you usually do with those overripe bananas lurking on your countertops? Do you make the quintessential banana bread, milkshake, pancake, freeze them, or just toss them? If I am no mood to bake then I usually make the delicious sweet paniyaram/appe for evening snack or strawberry banana milkshake. But when I’m in a baking mood and have some time, I scour the web for some really good recipes. This time, I chose a recipe from here. (She is the author of…

Chewy Chocolate Cookies

I am not much of a baker and I don’t bake often. But this blog and the kiddo have driven me in that direction and I am learning and enjoying as I go along. It has been a roller coaster ride, but with success like these that makes you want to do the happy dance and try your hand at some more.  The kiddo who is now 5 and half, loves to bake and help around in the kitchen. It is fun to watch his enthusiastic self, mixing stuff, measuring, chatting and of course making a mess. What are moms…

Avocado Chocolate Loaf

Avocado in a cake? Sounds strange right? Even I had felt the same when I had initially seen the recipe.  I was searching the web for different ways of using avocado when I chanced on this recipe here. I have pretty much followed the recipe with some changes of my own. Since I was trying this for the first time, I reduced the ingredients by half. I added milk instead of water, to make it little dense. But feel free to do add water or add soy milk and make this vegan, either way it tastes great. I also did…
