Oven Roasted Cauliflower

Along with baked potato fries, baked cauliflower/ oven roasted cauliflower is something that I make often.  I make this when I am pressed for time and need a quick  side dish for dinner. Dry Baingan Masala Curry/ Brinjal Podi

The aromatic powder gives good flavor to the cooked brinjal. Other vegetables that can be used are beans, carrots, cabbage and of course potatoes. My MIL reminded me that this is referred to as Kuttida Palya in Kannada.
