Remember the Dosa Month event I had a while ago? Well, I plan to do another event on similar lines for the month of June and the theme that I have chosen Light Lunches.

 I have had several friends ask me what I do for lunch at work like if I eat out, pack lunch etc. Well, I pack my own lunch and take it to work 95% of the time. I do not have anything against eating out, but being a vegetarian I think the choices are limited when eating out.  We do have a small, decent cafeteria in our office building. But the problem is that they have at most 2-3 options for the vegetarians. After eating there for few days it starts getting monotonous and I feel like shouting over the roof tops for some change. (OK, that was a bit of exaggeration).

Plus I am way too lazy to go out and grab some lunch. I cannot imagine myself walking out to the parking lot, taking my car, driving all the way to get lunch, drive back and then eat lunch; that is just not me. I would rather spend that ‘precious’ time with my colleagues or sit at my desk browse for some recipes or catch up a thing or two about my blog. “wink wink”.

Long story short I take my lunch to work. As a result I have control over the ingredients, calories but important of all the portion size. Portion control is very important as it is easy to over indulge especially while eating outside.

 I usually take rotis/sabji, or rice-sabji that is left over from the previous night’s dinner.  But now I am feeling a bit stuck with the same old stuff and ready for a change. So with this theme, I plan to diversify and try out and learn some new ideas in the process. Lunch ideas that will hopefully brighten the afternoons, boost health and shrink the expanding waistline (I will not go too much in detail about the last part as some things are better left unsaid). So the key to this theme would be to come up with

  • Vegetarian lunch like salads, sandwiches, rice, soups.
  • Easy lunch ideas that can be made the previous day.
  • Low calorie yet bursting with flavors.

  2. That is a wonderful theme and yes and for many of us who work, this is a challenge everyday. I am the opposite, I eat out 95% (though I am vegetarian), I try different combos and stuff, because I am lazy at home and don’t want to work in the morning (I leave home @ 5 am). Anyways, these days, I am trying to have something made the previous morning, so will try to participate.

    I am surely in for the giveaway and I am already a fan of your page and my favorite easy lunch is cooked rice mixed with anything or a veggie wrap 🙂

  3. Favourite lunch is a soup that I can eat on my desk or just lightly stir fried vegetables and tofu.

  4. I too take lunch to work and would love to have more quick lunch ideas. Many days I just take steamed vegetables sauted with some spices and fruits or roti-sabji. Looking forward to this event.

  6. What an inspiring blog post! And the giveaway is an extra nice touch. My favorite light and easy lunch is to search my fridge for veggies on hand, chop them up and toss them with oil and vinegar, salt & a dash of red pepper and garlic powder, and wrap it all up in a whole wheat tortilla.

  7. For a light lunch I like socca, a pancake-like bread baked in a 12″ pizza pan, made with besan, water, my favourite tastes (onion, garlic, hot peppers) and olive oil. I often eat it with either a green salad or steamed vegetables and olives.

  8. I love to eat a lunch with protein&greens..So I make a 2 minute palak panner wrap.& have some yogurt or butter milk(in the summers)..Its yummy, easy & just 2 mins away..its my daughters fav in her lunch box

  10. Sometimes eating just toasted bread (yesterday I tried Oats and Soya bread)topped with tomato gravy baked beans. Garnished with coriander leaves and “Potato sev”.

  14. My favorite lunch is always ‘Vaangi baath’ – eggplant mixed rice, which has rice and veggies in a one pot meal and doesn’t even need a side. 🙂

  23. I love light lunches.. well for summer I make light dinners. My favorite light lunch/dinner is veg. quinoa pulav with tomato-onion raita and a cool mango milkshake..

  24. I firmly believe you don’t have to starve to eat light. These are some of the food I take to work:
    1.Whole meal pittance with hummus, sprinkled with grated carrot, 1 tsp hemp seeds, a few golden currants and a dash of tabasco sauce. Filling, savoury/spicy and easy.

    2. Chapatti or wrap smeared with a little achar/pickle. Add boiled peas/potato (cooked with cumin and green green chilli) just mash a bit as u spread on roti. Can add chopped tomatoe and onion (optional) and. crunchy lettuce if u want.

Marinate overnight or even for a few mins some chopped tomato, black olives, red onion slice, chopped grilledsweet bell pepper. marinade is 1 tbsp olive oil, pinch garlic powder, dash vinegar, either splash of tabasco or chilling flakes, black pepper. In ciabatta or french baguette, spread cheese (cream cheese or sliced), add marinated veges. Mayo another option.
