It feels good posting a recipe after a long time. It’s been ages since I posted my last recipe here at Redchillies. Family commitments and other priorities took over and blogging took a back seat, lo and behold it’s about 5 years of break. Sounds cliched, but then times flies so fast, isn’t it? I started blogging here when my son Sid was a toddler and now, he is a teenager ready to learn new things..
Interestingly, over the summer he has taken an interest in cooking and is willing to try out new recipes. He has cooked pasta, noodles, cheese cakes, smoothies etc. Last week he tried these easy sweet and savory recipes with puff pastry, and it came out pretty good. They are easy to make and it has encouraged him to try more recipes.

Mini Mushroom Pockets
Ingredients:
- 2/3 puff pastry sheets
- 1/3 cup of spinach
- ½ cup of Swiss cheese
- 1/2 cup of chopped mushrooms
- ¼ cup of Parmesan cheese
- 3 tsp of dried oregano leaves
- 3 tsp of dried paprika powder
Preparation:
- Thaw the puff pastry sheet as per directions on the package.
- Preheat the oven to 400 F. Grease a baking sheet and keep it ready.
Method:
- Cut the puff pastry sheets into six even square pieces using a sharp knife.
- Make two rows of the sliced puff pastry squares.
- Add the mushrooms, Swiss cheese, spinach and Parmesan cheese on to the three puff pastry slices of the bottom row.
- After that put the puff pastry squares from top row on to the bottom row and seal all along the outer edges with a fork.
- Transfer it to a baking tray using a spatula.
- Put the baking tray in the oven and let it bake for 15-17 minutes until it turns golden.
- Let it cool before transferring to serving plate.
BlackBerry Jam Cheese Puffs
Ingredients:
- 2/3 puff pastry sheets
- 1 tsp of vanilla extract
- ½ cup of cream cheese
- ½ cup of sugar
- 1/8 cup of chocolate chips
- 1/3 cup of blackberry jam
Preparation:
- Thaw the puff pastry sheet as per directions.
- Preheat the oven to 400 F. Grease a baking sheet and keep it ready.
Method:
- Cut the puff pastry sheets into six even square pieces using a sharp knife.
- In a bowl whip together the cream cheese, sugar and vanilla.
- Cut the puff pastry sheets into six even square pieces using a sharp knife.
- Fold the puff pastry square into a triangle and cut diagonally from the bottom edge.
- Then pull the flaps of the two outer edges and overlap them over together
- Now put the cream cheese mixture in the middle of each puff pastry.
- After that put the blackberry jam on top of the cream cheese mixture
- Finally top the whole thing with some chocolate chips.
- Transfer it to a baking tray using a spatula.
- Put the whole baking tray in the oven and leave pastries in there till 15-17 minutes until it turns golden.
- Let it cool before transferring to serving plate.
